When I was at the market yesterday I discovered some mysterious-looking produce called a chayote. [livejournal.com profile] corivax informed me it could be cooked like a potato and went well with peppers, so I chopped it up along with a poblano pepper and sauteed it in a mixture of olive and sesame oil. I then added some corn and seasoned with chopped garlic, salt, black pepper, a hint of bacon salt, and cayenne powder. When it was done cooking, I turned off the heat and dropped in a couple of handfuls of fresh spinach, which I let wilt in the remaining heat. I then topped it with chopped fresh mango.

So I guess it's a salad. A very savory, spicy salad.

And the chayote? In the end, I think I decided it tasted like a cross between a potato and a carmelized onion.
