Tarragon Mushroom Sauce
Mar. 29th, 2008 10:46 pmExperimental sauce notes: Mushroom, garlic, onion, tarragon, smoked paprika, sage, rosemary, black pepper. (And cayenne, because I'm weird and seem to need a certain baseline amount of heat just to notice flavors.)
The end result was very earthy and robust. A good complement to the cold, rainysnowy weather as of late.
Tarragon is not to be trusted. The floral nature originally made the sauce seem way too sweet; the smokiness of the paprika seems to counteract it nicely.
