Handy baking tip I discovered today: Your typical acorn squash, when cooked and lightly pureed, yields about 1 cup of squash puree, and is readily substituted for pumpkin in The Joy of Cooking's recipe for pumpkin bread, which conveniently happens to call for 1 cup of puree.
