* Morningstar Vegetarian Bacon
* Provolone cheese
* Whole grain bread
* Avocado spread
* Fresh sliced green pepper
* Honey dijon mustard
It is amazingly rich and nutty tasting. You might need to add salt and pepper to this, as the vegetarian bacon doesn't bring a lot by itself. There's also a lot of room for variation with this sandwich, for example I want to try:
* Nopales and hickory salt instead of bacon.
flata suggested this; apparently fried nopales have much the same texture and flavour.
* Different ingredients in the avocado spread - instead of just plain mashed avocado, I'm thinking it might be good to mix in some flavour enhancers here. Cream cheese might be good, although truth be told, this stuff is already very rich-tasting. Other options might be a small amount of sesame oil or wasabi, or maybe some balsamic vinegar to add some tartness.
And for what it's worth, I would totally recommend the vegetarian bacon even if you're not a vegetarian. It's almost identical in flavour, but saves you a lot of messy cleanup (almost no grease, and none of the problems associated with raw meat), and is a lot healthier for you. Back when I ate meat, I hardly ever ate bacon because I figured it was so bad for you, but this stuff is almost half the fat, and it's almost all unsaturated, non-trans fat.
